Oddly enough, baked oats are blended oats similar to using oat flour, while baked oatmeal are whole oats more closely similar to a warm oatmeal bar. I can't find a baked oatmeal recipe that I'm a fan of, but I make baked oats almost every morning. Super easy recipe, fairly healthy, and my toddler is even a fan. Definitely a win!
I honestly forget where I first found the recipe idea for this. There are hundreds of variations for baked oats, but I stick to the same recipe every time I make it. Side note: I only measure out the portion for the oats. I eyeball the rest. Definitely tweak based on your preference for more cinnamon, syrup, etc.
I use the individual portion blender for our Ninja.
Add:
1 banana
1/2 cup old-fashioned oats
1 egg
1/2 tsp baking powder
1/2 tsp cinnamon (or more...can you ever have enough?)
1/2 tsp vanilla extract (I pour a bit in...why measure?)
1 tbsp maple syrup
Blend. Pour into a bowl with 1/4 cup peanut butter and a scoop of mini-chocolate chips. I highly recommend the Ghirardelli mini-chocolate chips. My opinion is that regular sized chips are too largely sized for the ramekins.
Grease three ramekins--I use 6 oz ones. Pour in the batter equally across the ramekins. It'll be pretty thick. Bake at 375 degrees for about 10 minutes. You'll see some cracks appearing on the top. Check with a toothpick, but once it comes out clean, they're ready! Sometimes I use a mini baking dish, which increases the cook time a bit, but I'd rather eat out of a ramekin. Feels like a soufflé for breakfast.
These are very filling. I refrigerate the leftovers for a snack or for breakfast the next morning for my toddler. I'm sure there are lots of other variations, but this is my favorite. Who doesn't love chocolate for breakfast? PS: I find using cocoa powder dries them out too much. I'd rather use the (mini) chocolate chips.
Warning: not sure why, but this recipe does not double well. I tried to make it for family visiting for the weekend, and it turned out terribly both times. I recommend sticking to the original proportions. It still makes three portions. I would recommend making it twice instead of doubling it. Weird, I know, but it's the only way that works for me. Since I use the individual blender for my Ninja, I can't fit everything needed to double the recipe in the cup anyways, so it makes sense to me to do it all twice.
This recipe is simple and nutritious. Also, it's my toddler's favorite breakfast, so that's a win. One plate. One meal.
This entire recipe exists in my pantry, but I try to make sure my pantry stays stocked with old-fashioned oats, peanut butter, bananas, and mini-chocolate chips (most important!)
