Lettuce Wraps? Yes, Please!

This copy cat recipe is incredible. I've never had the original, so I can only imagine. Easy to make and kid-friendly.
This is a quick dinner to put together for a weeknight and tastes DELICIOUS!
Lettuce Wraps: Recipe comes from Damn Delicious. These only take about 15 minutes to make, and store well for the next day. I follow the recipe fairly carefully, but I add extra soy sauce and hoisin sauce to make sure the meat is extra saucy. I love the addition of the sriracha, but my toddler is not as much of a fan, so I typically leave that out, and add when I put the ingredients together to eat. Also, add some sesame seeds on top once plated--always a fun crunch and great visual appeal.
Side note: the water chestnuts and green onions are my two favorite aspects. The water chestnuts add a much needed crunch, and can you ever have enough green onion? I had a similar recipe from a local restaurant, but they added celery instead of water chestnuts. I LOVE the taste of cooked celery, so I'll experiment with this next. Not sure if some celery salt will be sufficient, if I need to fully replace the water chestnuts with celery, or can I use both (or all three) together? Stay tuned.
Veggies: I most often roast some asparagus to serve with these wraps to make it a complete meal, but any veggie would do--carrots, green beans, peas, etc.
This felt like a complete meal and was a great weeknight addition. That’s it. Try it out! One plate. One meal.
